COCONUT HUMMINGBIRD BUNDT CAKE

     Ya estamos otro mes más aquí, esta vez en un nuevo año, con nuestros amigos de #Bundtbakers. Parece que fue ayer cuando me uní por primera vez a este grupo y con ésta serán ya 5 las aportaciones que he hecho. Estoy muy contenta porque todavía no he faltado a ninguna (cruzo los dedos) y es que un buen bundt cake es irresistible, y eso lo sabemos bien todos los que componemos el grupo.      En esta ocasión, nuestra amiga Terri del blog Love and Confections  nos ha propuesto como ingrediente para hacer nuestro bundt el "coco". La verdad es que no soy una apasionada del coco, no me disgusta pero tampoco es uno de mis ingredientes o sabores preferidos. Me tiran más los frutos del bosque que las frutas tropicales, aunque hay alguna excepción como el mango. Me encanta ese sabor como a madera... no sé... me sabe simplemente delicioso.



     Para esta ocasión he elegido un bundt cake que me resultó muy tropical y que pensé que añadiéndole el coco sería ya fantástico. Así que, cogí la base del Hummingbird Bundt Cake de Bakers Royal, la adapté a mis gustos y le añadí el coco rallado, que lo hizo aún más delicioso, y por si fuera poco, le hice un glaseado de leche de coco y jugo de coco que está para chuparse los dedos. Pero, antes de liarme con la receta, os cuento un poco sobre la historia del Hummingbird cake que me ha parecido muy curiosa.



     También conocido como el "pastel de la abuelita" o "el pastel que no dura", el hummingbird cake (pastel colibrí en español) tiene un origen incierto. (Y yo me pregunto: en repostería ¿qué lo tiene?). No se sabe si viene de Jamaica o de Australia, pero el caso es que la primera reseña publicada de él fue en la revista norteamericana Southern Living en Febrero de 1978. La Sra. L.H. Wiggins de Greensboro, Carolina del Norte, mandó la receta y actualmente es una de las más visitadas. Algunos dicen que su nombre le viene por el dulzor que tiene, comparándolo con el dulzor del néctar que recogen los colibríes de las flores. Sea como fuere, hay que darle las gracias a esta señora por hacer un pastel tan bueno.
      Y después de esta pequeña historia, os dejo con una receta buenísima, que tiene un sabor espectacular y un bizcocho muy húmedo y suave. Espero que os guste.




COCONUT HUMMINGBIRD BUNDT CAKE

Ingredientes:

Para el bundt cake:
60 gr. de nueces troceadas
175 gr. de harina
3/4 cucharadita de bicarbonato sódico
1/2 cucharadita de canela molida
1/4 cucharadita de sal
100 gr. de aceite de girasol
200 gr. azúcar
3 huevos M
1 cucharadita de pasta de vainilla Home Chef
1 1/2 plátano mediano machacado
100 gr. de piña en trocitos pequeños (sin escurrir demasiado)
60 gr. de coco rallado

Para el glaseado de coco:
60 gr. de queso Philadelphia
100 gr. de azúcar glas
2 cucharadas de leche de coco (pasta)
3 cucharadas de jugo de coco natural (líquido)

Preparación:

Del bundt cake:
  • Precalentamos el horno a 180ºC.
  • En un bol, mezclamos la harina, el bicarbonato, la sal y la canela. Tamizamos.
  • En un bol grande, batimos el azúcar con el aceite hasta que estén bien mezclados.
  • Añadimos los huevos de uno en uno, batiéndolos un poco antes.
  • Añadimos la pasta de vainilla y mezclamos hasta que esté bien incorporada.
  • A continuación, echamos los plátanos machacados, la piña, el coco y las nueces y removemos con una espátula para agregarlos bien.
  • Engrasamos nuestro molde de bundt cake con spray desmoldante y echamos la masa con cuidado.
  • Horneamos durante unos 50-60 minutos o hasta que el bundt cake esté bien hecho y lo pinchemos con un palillo y salga limpio.
  • Sacamos del horno y ponemos sobre una rejilla durante unos 10 minutos o hasta que el molde esté bastante frío.
  • Damos la vuelta al bundt cake y dejamos enfriar en la rejilla. (Al mío le costó salir, creo que fui demasiado impaciente, pero al final salió bien.)
     Mientras se enfría el bundt cake, podemos preparar el glaseado.

Del glaseado:
  • Mezclamos todos los ingredientes hasta que obtengamos un glaseado de espesura media, no muy espeso pero tampoco líquido, líquido. De todas formas, podéis añadir más o menos jugo de coco para hacerlo más o menos líquido. A mí me gustó como quedó, pero el libro de los gustos está en blanco.
  • Cuando el bundt cake esté completamente frío, le echamos por encima el glaseado y lo tenemos listo para comer.

COCONUT HUMMINGBIRD BUNDT CAKE

Ingredients:

For the bundt cake:
60 gr. walnuts, chopped
175 gr. all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
100 gr. canola oil
200 gr. granulated sugar
3 Medium eggs
1 teaspoon vanilla paste (Home Chef)
1 1/2 medium mashed bananas
100 gr. crushed pineapple (not totally drained)
60 gr. grated coconut

For the glaze:
60 gr. cream cheese
100 gr. icing sugar
2 Tablespoon coconut milk (paste)
3 Tablespoon coconut juice



Directions:

For the bundt:

  • Pre-heat the oven to 180ºC.
  • In a medium bowl, mix the flour, the baking soda, the salt and the ground cinnamon and sift.
  • In a big bowl, whisk sugar and oil until well mixed.
  • Add the eggs, one at a time, lightly beaten.
  • Add the vanilla paste and whisk until well incorporated.
  • Add the mashed bananas, the crushed pineapple, the grated coconut and the walnuts. Stir with a spatula.
  • Grease the bundt mold with a non-stick spray and pour the mixture slowly.
  • Bake for 50-60 minutes or until it is golden brown and introduce a stick and it comes out clean.
  • Leave in the mold and place in a wire rack until the mold is almost cool.
  • Turn down the cake and let it cool in the wire rack.
  • Meanwhile, we can make the glaze.
For the glaze:
  • Mix all the ingredients in a medium bowl until you get a medium thick glaze. Nor too thick, nor too liquid. You can add more or less coconut juice depending on your taste.
  • Once the bundt cake is completely cool, pour the glaze on top.
  • It is simply, delicious.
